Ingredients  

  1. Preheat the oven to 225/435F.
  2. Divide the avocado in two. Carefully chop the knife into the avocado stone, turn the knife to the side and remove the stone. Using a spoon, take out some of the avocado meat from each half, enough to accommodate an egg in each cavity. Eat what you take out. Yum...
  3. Place the avocados halves in a casserole. Make sure they stand straight, this is easier to do by supporting them against the side of the casserole or against each other.
  4. Crack the eggs and place them in the cavity of the avocados. Season with salt and pepper. If the eggs are too large for the avocados, you can crack the egg in a bowl first, remove some of the egg white and then have the egg in the avocado.
  5. Put in the oven and bake for approx. 15 minutes, until the egg whites are done but the egg yolks are still soft.
  6. Sprinkle with chili flakes and sprouts. Serve with salad.
